Flapjack Recipes

 

Traditional Flapjack

This is a basic recipe taken from Nigella Lawson that I use:

 

Ingredients

  • 450g rolled oats (I buy the small porridge oats which work well)
  • 75g soft brown sugar (I’ve also used dark brown sugar when I ran out of light brown)
  • 300g unsalted butter
  • 150g golden syrup (I have used honey instead on occasion)

 

Melt the butter with the syrup (or honey) on a gentle heat. Mix the oats and sugar together. When the butter and syrup is melted mix it with the oats and sugar.

 

That is it, however at this point I add some bits and pieces depending what I have in the cupboard. If I use honey I tend to put some chopped nuts in, or maybe some chopped dried fruit like apricots. If I use syrup I put in some raisins. I don’t measure I just put in enough to make sure you can see the added extra right through the mixture. However the plain recipe without any of this is nice too.

 

Lightly butter a baking tin – I use one about 3cm tall and 23cm by 15cm. Press the mixture firmly into the tin. Bake at gas mark 5 (190C) for 25 minutes. Leave in the tin until completely cold then pull out and cut into pieces.

 

We have them thick and chewy which is easier for munching on the go, but if you like crunchy put the mixture into a shorter wider tin so the mixture spreads thinner – the thinner the crunchier. If you spread it really thin you might need to reduce the cooking time so keep and eye on it – when it is golden it is done. These can be kept in a baking tin or bread bin.

 

Home Made Energy Bar

I have another recipe that we got out of 220triathlon magazine for cranberry and apple energy bar:

 

Ingredients

  • 250g large rolled oats
  • 40g brown sugar
  • 120g butter
  • 210g dried cranberries
  • 40g chopped dried apple
  • 45g chopped dates
  • 45g sunflower seeds
  • 20g sesame seeds
  • 85ml apple juice
  • 140ml clear honey

 

Put dates, apple, oats, cranberries, sunflower seeds and sesame seeds into a bowl. Put the butter, honey, apple juice and sugar into a pan and heat until bubbling. Mix the hot ingredients with the dry ingredients in the bowl. Stir well and then leave for 5 minutes until the oats have absorbed the moisture.

 

Line a baking tin with baking parchment. Put the mixture in a press firmly down to compact it. Place another sheet of baking parchment over the top. Bake at 170c for 20 minutes. Leave to go cold, cut to desired size and then keep in the fridge because of the apple juice etc in it.
